Tuna, bean and roasted tomato fattoush

Vibrant Middle Eastern salad with tuna, tomatoes, and beans - a delicious and nutritious high-fiber dish.
Ingredients:
  • 150g green beans, trimmed, halved
  • 1 Lebanese cucumber, peeled into ribbons
  • 40.00 ml red wine vinegar
  • 500g cherry tomatoes
  • 2 red capsicum, thickly sliced
  • Olive oil cooking spray
  • 2 large pita breads
  • 36.40 gm extra virgin olive oil
  • 1 tsp sumac (see note)
  • 400g can four bean mix, drained, rinsed
  • 425g can tuna in oil, drained, flaked into large pieces
  • 2 green onions, chopped
  • 250.00 ml fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Combine green beans and cucumber in a large glass or ceramic bowl. Drizzle with vinegar and sprinkle with salt and pepper. Gently toss to mix everything together well. Let sit for 20 minutes.
  • Place the tomatoes and capsicum on the tray. Drizzle with oil and sprinkle with salt and pepper. Roast for 20 minutes or until soft and flavorful.
  • Preheat a chargrill pan over medium-high heat. Grill each pita individually for 1 to 2 minutes until crispy. Place on a baking tray, brush with half of the oil, sprinkle with sumac, and season with salt.
  • Combine the four bean mix, tomatoes, capsicum, tuna, green onion, parsley leaves, and remaining oil with the green bean mixture. Toss gently to mix well. Tear the bread into pieces and add it to the mixture. Toss lightly until just combined. Serve immediately.
