Create a flavorful tuna salad with rocket and feta.
Ingredients:
  • 400g orecchiette pasta
  • 350g punnet tomato medley, halved lengthways
  • 2 Lebanese cucumbers, quartered lengthways, cut into 1cm pieces
  • 2 spring onions, trimmed, thinly sliced
  • 70g pitted kalamata olives
  • 425g Tuna Chunks in Olive Oil Blend, drained, roughly flaked
  • 40g baby rocket leaves
  • 125g Persian marinated fetta, crumbled
  • Extra virgin olive oil, for drizzling
Instructions:
  • Boil pasta in a large pot of water for 12 minutes until al dente. Drain and rinse with cold water. Let cool in a colander.
  • In a large bowl, mix together cooled pasta, tomatoes, cucumbers, spring onions, and olives. Add tuna, arugula, and feta. Season with pepper to taste, gently toss everything together. Finish with a drizzle of extra virgin olive oil before serving.
