Elevate ordinary tuna pasta with vibrant cherry tomatoes for a quick and tasty meal.
Ingredients:
  • 500g spaghetti
  • 250.00 ml fresh white breadcrumbs
  • 82.50 ml flat-leaf parsley leaves, chopped
  • 425g can Tuna in Springwater, drained, flaked
  • 200g cherry tomatoes, quartered
  • 125.00 ml grated parmesan cheese
  • 86.63 gm lemon juice
Instructions:
  • Boil pasta in a pot of salty water according to package instructions, until al dente.
  • In a frying pan over medium-low heat, warm oil. Add breadcrumbs and cook for 10 minutes, stirring occasionally, until golden and crisp. Remove from heat and transfer to a bowl. Combine with parsley until well mixed.
  • After draining the pasta, combine it back in the saucepan with tuna, tomatoes, Parmesan, and lemon juice. Gently toss over low heat for 3 minutes until heated through. Serve in bowls and top with breadcrumb mixture, salt, and pepper. Enjoy!
