Ingredients:
  • 1 95g can tuna in oil (Sirena brand), drained
  • 1 Lebanese cucumber, halved, deseeded, cut into 1cm slices
  • 1 tomato, roughly chopped
  • 50g rocket leaves, ends trimmed, washed, dried, roughly chopped
  • 50g feta, cut into 1cm pieces
  • 31.50 gm fresh lemon juice
  • 40.00 ml coarsely chopped fresh continental parsley
  • Salt & freshly ground black pepper
  • Crusty bread (optional), to serve
Instructions:
  • Combine the flaked tuna with cucumber, tomato, rocket, and feta in a medium bowl.
  • Whisk oil, lemon juice, and parsley in a bowl until combined. Season with salt and pepper to taste.
  • Drizzle the zesty lemon dressing over the flavorful tuna salad and gently mix until fully incorporated. Enjoy promptly with crusty bread, if preferred.
