Tuna and vegetable sushi sandwich

Irresistible tuna sushi sandwiches with creamy mayo, fresh carrots, and crisp cucumber - perfect for little ones!
Ingredients:
  • 1/4 nori sheet
  • 4 slices high fibre white bread, crusts removed
  • 20.00 gm salt-reduced margarine
  • 185g can tuna in springwater, drained well, flaked
  • 19.80 gm reduced-fat mayonnaise
  • 1/2 small carrot, cut into matchsticks
  • 1/2 small Lebanese cucumber, cut into matchsticks
Instructions:
  • Slice nori into four strips that measure 1cm x 10cm each and remove any leftover nori.
  • Lay out bread slices and gently flatten with a rolling pin. Spread with margarine.
  • In a small bowl, mix tuna and mayonnaise, then season with pepper. Spread bread slices evenly with tuna mixture, leaving a 1cm border on one edge. Divide carrot and cucumber into 4 portions and stack on bread slices. Roll up bread slices starting from the edge closest to you to enclose the filling. Wrap each sandwich with a nori strip, securing the ends with a little water. Pack 2 sushi sandwiches in each lunchbox.
