Delicious tuna salad with fresh veggies and light shirataki noodles for a healthy, flavorful dish.
Ingredients:
  • 0.5 (12 ounce) package fresh green beans, trimmed
  • 0.75 cup sliced red bell pepper
  • 0.33333334326744 cup chopped onion
  • 0.5 cup sliced fresh mushrooms
  • 1 (8 ounce) package shirataki noodles (such as Miracle Noodles®)
  • 0.5 cup almond milk (such as Silk®)
  • 2 tablespoons light vegetable cream cheese
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • 0.5 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 1 (7 ounce) can yellowfin tuna, drained
Instructions:
  • In a large pot, submerge green beans in salted water and bring to a boil. Let them simmer on medium-low heat until they are tender but still have a slight crunch, for about 5 minutes. Drain the green beans.
  • Saute red bell pepper and onion in a large nonstick skillet until tender, for about 5 minutes. Then, toss in mushrooms and cook for an additional 3 to 4 minutes.
  • Once the mushrooms are cooking, proceed to drain and rinse the noodles, and then set them aside.
  • Blend almond milk, cream cheese, seafood seasoning, garlic powder, and pepper in a blender until velvety smooth.
  • Combine green beans, noodles, cream cheese mixture, and tuna with the mushroom mixture. Gently stir until everything is heated through, which should take 5 to 8 minutes.
