Simple and tasty pasta salad, perfect for on-the-go lunches.
Ingredients:
  • 250g dried pasta shells
  • 61.88 gm whole-egg mayonnaise
  • 10.60 gm lemon juice
  • 125g cherry tomatoes, halved
  • 4 button mushrooms, sliced
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • 95g can tuna in springwater, drained, flaked
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain, rinse with cold water, and let cool.
  • In a large bowl, mix together mayonnaise and lemon juice. Add pasta, tomato, mushroom, parsley, and tuna. Stir to combine thoroughly. Transfer mixture to airtight containers, refrigerate, and serve.
