Vibrant tuna pasta salad with eggs, peas, red onion, and zesty honey-lemon dressing - perfect for summer gatherings!
Ingredients:
  • 1 (16 ounce) package cavatappi (corkscrew macaroni)
  • 1 cup mayonnaise
  • 3 tablespoons lemon juice
  • 0.5 tablespoon garlic powder
  • 2 (8 ounce) cans tuna, drained
  • 3 stalks celery, sliced
  • 1 red onion, diced
  • 1 cup peas
  • 0.25 cup chopped fresh parsley
  • 0.5 cup chopped green olives
  • 1 teaspoon lemon juice, or to taste
  • 4 hard-boiled eggs, halved
Instructions:
  • Boil a pot of salted water, then cook pasta until al dente, about 9 to 10 minutes. Drain and transfer pasta to a large bowl.
  • Prepare the dressing by whisking together mayonnaise, 3 tablespoons of lemon juice, honey, garlic powder, salt, and pepper in a medium bowl. Keep it aside for later use.
  • Combine tuna, celery, onion, peas, parsley, olives, and 1 teaspoon of lemon juice with the pasta. Drizzle dressing over the salad, mix well until everything is coated, and garnish with hard-boiled eggs.
