Make a quick and vibrant tuna pasta salad for a delicious and nutritious meal.
Ingredients:
  • 100g (1 cup) macaroni pasta
  • 1 small lemon, rind finely grated, juiced
  • 18.20 gm olive oil
  • 95g can tuna in oil, drained, flaked
  • 75g cherry tomatoes, halved
  • 1/2 Lebanese cucumber, diced
  • 62.50 ml flat-leaf parsley leaves, chopped
  • 1 hard-boiled egg, quartered
Instructions:
  • Boil pasta in salted water according to package instructions until tender. Drain and transfer to a large bowl.
  • In a jug, mix together lemon rind, 1 tablespoon lemon juice, oil, salt, and pepper.
  • Combine tuna, tomatoes, cucumber, and parsley with pasta. Drizzle with dressing and mix thoroughly. Garnish with egg and season with salt and pepper. Serve warm or at room temperature.
