Tuna sashimi

Ingredients:
  • 500g sashimi-grade tuna
  • 2 avocados, flesh cut into thick slices
  • 36.40 gm extra virgin olive oil
  • 21.00 gm lime juice, plus extra lime to serve
  • 4 spring onions, finely sliced on the diagonal
  • 125ml soy sauce
Instructions:
  • Slice the tuna into delicate 0.5cm pieces using a sharp knife, then arrange on a serving platter along with the avocado slices.
  • Mix the extra virgin olive oil and lime juice. Just before serving, drizzle the lime dressing over the avocado and tuna. Top with spring onions and season with sea salt and pepper.
  • Drizzle soy sauce for dipping and add extra lime to taste before serving.
