Sweet & spicy lamb tagine - a tantalizing delight.
Ingredients:
  • 20.00 ml Moroccan Seasoning
  • 1 tsp cayenne pepper
  • 1 tsp ground coriander
  • 800g lamb leg mini roast, excess fat removed, cut into 3cm pieces
  • 1 large brown onion, halved, sliced
  • 1 red capsicum, seeded, cut into 6cm pieces
  • 1 large truss tomato, cut into 8 wedges
  • 8 large fresh dates
  • Fresh coriander sprigs, to serve
Instructions:
  • In a bowl, mix oil, Moroccan seasoning, cayenne pepper, and ground coriander. Add lamb and toss to ensure it's coated well. Cover and refrigerate for 4 hours or overnight to let the flavors meld.
  • Combine the onion, capsicum, and tomato with the lamb mixture, tossing gently. Place the mixture into a 1L (4-cup) flameproof tagine, then add the dates on top. Cover and cook over low heat for 1 hour until the lamb is tender. Serve the tagine in individual dishes, garnished with fresh coriander sprigs.
