Hearty open-face sandwiches with tasty frozen antioxidant veggies - grab a fork and knife to dig in!
Ingredients:
  • 1 box (7 oz) frozen blend broccoli, carrots and sweet peppers
  • 1 teaspoon Dijon mustard
  • 2 slices multigrain bread, toasted
  • 2 oz sliced deli roasted turkey breast
  • 1/4 cup shredded smoked Gouda cheese
Instructions:
  • Preheat the broiler. Cook the vegetables according to the box instructions, then transfer them to a medium bowl. Mix in the mustard.
  • Place the toasted bread slices on a cookie sheet. Evenly layer the turkey on top of the bread. Spoon the vegetable mixture over the turkey and sprinkle each with 2 tablespoons of cheese.
  • Place dish in the oven and broil 4 to 6 inches from the heat source for 1 to 2 minutes until the cheese is melted and bubbly.
