Turkey mince is a flavorful and healthy choice for this simple and delicious family pilaf.
Instructions:
  • 1. Heat oil in a large non-stick pan over medium heat. Saute onion and garlic for 2 minutes until soft. Stir in cumin, coriander, ginger, cinnamon, and chili for 1 minute until fragrant. Increase heat to high. Add turkey and cook for 6 minutes, breaking up with a wooden spoon until browned and cooked through.
  • Place couscous, cranberries, lemon rind, juice, and water in a heatproof bowl. Cover with plastic wrap and let sit for 5 minutes to absorb. Fluff with a fork and season.
  • Finely chop half of the mint and coriander. Combine the turkey mixture with all the mint and coriander, then mix into the couscous. Sprinkle with pistachios and drizzle with extra oil.
