Turkey pasta salad with ricotta pesto

Delicious and healthy turkey pasta salad with ricotta pesto - a satisfying low-GI dish.
Ingredients:
  • 300g dried wholemeal penne pasta
  • 200g green beans, trimmed, cut into 3cm lengths
  • 125.00 ml no-added-fat semi-dried tomatoes, thinly sliced (see note)
  • 150g sliced smoked turkey, chopped
  • Small fresh basil leaves, to serve
  • 120.00 gm reduced-fat ricotta cheese
  • 40.00 ml chopped fresh basil leaves
  • 40.00 ml finely chopped fresh chives
  • 1 tsp finely grated lemon rind
Instructions:
  • Boil pasta in a generously salted pot of water according to package instructions until al dente, then add beans for the final 2 minutes. Drain, rinse with cold water, and transfer to a large bowl.
  • While you wait, prepare the pesto by mixing ricotta cheese, fresh basil, chives, lemon zest, minced garlic, and lemon juice together in a bowl. Gradually stir in 1 to 2 tablespoons of hot water until the mixture reaches your desired consistency, adding more water if needed.
  • Combine the ricotta pesto with the pasta and beans, followed by the tomato and turkey. Toss everything together and season with pepper. Serve garnished with fresh basil.
