Honey miso turkey meatballs with noodle salad

Tangy noodle salad complements flavorful turkey meatballs with sweet honey sauce.
Ingredients:
  • 3 green shallots
  • 600g turkey mince
  • 20.00 ml finely grated fresh ginger
  • 2 garlic cloves, crushed
  • 60.00 gm miso paste
  • 12.5g (1/4 cup) panko breadcrumbs
  • 60ml (1/4 cup) mirin
  • 60ml (1/4 cup) rice wine vinegar
  • 71.50 gm honey
  • 180g soba noodles
  • 2 bunches broccolini, halved diagonally
  • 500.00 ml edamame beans, blanched, podded
  • 3 tsp sesame oil
  • Shiso leaves or Asian greens, to serve (optional)
Instructions:
  • Diagonally slice 2 shallots thinly and set aside. Finely chop the remaining shallot and place in a bowl. Combine with turkey mince, 2 teaspoons of ginger, garlic, 3 teaspoons of miso, and breadcrumbs. Season and mix well. Shape tablespoonfuls of the mixture into balls and arrange on a lined tray.
  • In a jug, mix mirin, vinegar, honey, ginger, and miso. Boil noodles and broccolini in a large saucepan for 3-4 minutes until tender. Drain, cool, and transfer to a bowl. Combine with edamame, shallot, and sesame oil. Mix well.
  • Heat the rest of the oil in a big non-stick pan over medium-high heat. Sear meatballs, turning occasionally, for 6 minutes until they are golden. Pour in the miso mixture and cook for another 3-4 minutes until the sauce thickens and the meatballs are fully cooked.
  • Plate the noodle salad, portioning it into individual bowls. Place the meatballs on top and generously drizzle with the flavorful sauce. Optional: Garnish with fresh shiso leaves or Asian greens before serving.
