Turkey roulades with sage stuffing

Experience a stress-free and delicious festive meal with this quick and easy recipe!
Ingredients:
  • 4 x 180g turkey breast fillets or chicken breast fillets
  • 40.00 ml chopped sage, plus whole fried sage leaves to serve
  • 4 thin pork & herb sausages, casings removed
  • 24 flat pancetta slices (see note), rind removed
  • Roast potatoes, to serve
  • Gravy, to serve
Instructions:
  • Sandwich fillets between parchment paper and gently pound with a rolling pin until 1.5cm thick. Season generously and sprinkle with chopped sage. Evenly distribute sausage meat on fillets and tightly roll to enclose all the flavors.
  • Lay out 6 pancetta slices slightly overlapping on a work surface. Position 1 fillet at the bottom edge of the pancetta and roll up to enclose, then tightly wrap in foil. Repeat with the remaining pancetta and fillets. Chill for 1 hour to set.
  • Preheat the oven to a toasty 180°C.
  • Place the parcels on a baking tray and roast for 35 minutes. Uncover the parcels and continue to bake for another 10 minutes until the pancetta is golden and the meat is fully cooked.
  • Slice the roulades, adorn with crispy sage leaves, and enjoy with crispy roast potatoes and rich gravy.
