Effortlessly whip up a flavorful turkey tortilla soup using leftover turkey, corn tortillas, and spicy chipotle in adobo.
Ingredients:
  • Pinch ground cumin
  • 6 6-inch yellow corn tortillas
  • 4 tablespoons extra virgin olive oil, canola oil, or peanut oil
  • 2 cloves garlic, minced, about 2 teaspoons
  • 1 chipotle chili in adobo, minced
  • 6 cups turkey stock or chicken stock
  • 1 15-ounce can crushed tomatoes (use fire roasted if available)
  • 1/2 teaspoon kosher salt (more to taste)
  • 2 cups cooked, shredded turkey meat
  • Garnishes:
  • 1 avocado, cut into cubes
  • 1 cup shredded Monterey Jack cheese (or mild cheddar)
  • Chopped fresh cilantro
  • 1 lime, cut into wedges
Instructions:
  • Prepare tortilla strips: Start by ensuring your corn tortillas are somewhat dry. You can achieve this by leaving them out overnight on a rack or by placing them in a 200°F oven for 10 minutes. If they are too dry, soften them in the microwave for 30 seconds. Slice the tortillas into 1/4-inch wide strips and cut the longer strips in half. Heat oil in a thick-bottomed pot over medium-high heat until shimmering hot. In batches, fry the tortilla strips until lightly browned at the edges, about 1 minute. Use tongs to transfer them to a paper towel-lined plate.
  • Soften the onions: Sauté the chopped onions in the remaining oil over medium-high heat until soft, about 3 to 4 minutes.
  • Enhance flavor: Stir in garlic, cumin, and minced chipotle in adobo; sauté for an additional 2 minutes.
  • Combine crushed tomatoes, turkey (or chicken) stock, and salt in the pot. Bring the mixture to a high simmer, then reduce the heat and gently simmer for 15 minutes.
  • Incorporate shredded turkey: Add the shredded turkey and cook until it is just heated through for about a minute or two.
  • To present: Distribute half of the crispy tortilla strips into separate serving bowls. Ladle the soup over the top.
