Transform your leftover turkey into mouthwatering tostadas topped with creamy avocado and sour cream.
Ingredients:
  • 1 red onion, halved
  • 6 tomatoes, halved
  • 2 garlic cloves
  • 2 long red chillies
  • 36.40 gm olive oil
  • 125.00 ml chopped coriander, plus extra sprigs to serve
  • 640g cooked turkey
  • 435g can refried beans
  • 6 flour tortillas, toasted
  • 750.00 ml shredded iceberg lettuce
  • 1 avocado, flesh chopped
  • 120g sour cream
  • Lime wedges, to serve
Instructions:
  • Preheat your oven to 180°C. Cut 1 onion in half and then into wedges. Arrange the onion in a baking pan with tomato, garlic, and chillies. Drizzle with oil and bake for approximately 20 minutes until tender and lightly charred.
  • Peel tomatoes effortlessly. Discard chili stalk and seeds. Blend roasted tomato, chili, garlic, and onion until smooth. Stir in coriander, then season to taste. Coat turkey in about 2 cups of sauce in a bowl.
  • Gently warm beans in a pan over low heat for 1-2 minutes. Slice the remaining onion thinly.
  • Lay a tortilla on a plate, generously spread with warm beans, layer with turkey, lettuce, onion, avocado, and a dollop of sour cream. Season to taste and serve with lime wedges and fresh coriander sprigs.
