Savory turkey dumpling soup with vegetables and flavorful homemade dumplings, perfect for using up Thanksgiving leftovers.
Ingredients:
  • 0.5 cup butter, cubed
  • 8 medium carrots, cut into 1-inch chunks
  • 4 stalks celery, cut into 1-inch chunks
  • 1 cup chopped onion
  • 4.6666665077209 cups water, divided
  • 2 (10.5 ounce) cans condensed beef consommé
  • 2 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 3 cups cubed leftover cooked turkey
  • 2 cups frozen cut green beans
  • 0.5 cup all-purpose flour
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons baking powder
  • 0.125 teaspoon poultry seasoning
  • 0.75 cup 2% milk
  • 1 large egg
Instructions:
  • In a Dutch oven over medium-high heat, melt butter. Sauté carrots, celery, and onion until soft, about 5 to 10 minutes. Stir in 4 cups water, condensed consommé, salt, and pepper; bring to a boil. Cover, reduce heat to low, and simmer until vegetables are tender, about 10 to 15 minutes.
  • Combine succulent turkey and crisp green beans in the Dutch oven; sauté for 5 minutes.
  • In a small bowl, mix the flour, remaining 2/3 cup water, and Worcestershire sauce until smooth. Stir this mixture into the soup, then bring to a boil over high heat. Reduce heat, cover, and simmer until the soup thickens, approximately 5 minutes.
  • Prepare the dumplings by combining flour, parsley, baking powder, salt, and poultry seasoning in a large bowl. In a separate bowl, whisk together milk and egg. Gently fold the egg mixture into the flour mixture until just combined to form the batter.
  • Drop dollops of dumpling batter into the gently bubbling soup. Cover and let it simmer until a toothpick inserted into a few dumplings comes out clean, for around 15 to 20 minutes.
