Create juicy turkey burgers by adding grated zucchini for moisture. Infused with basil, onions, and garlic, and served with flavorful garlic mayo.
Ingredients:
  • 1 pound ground turkey (thigh meat preferred)
  • 2 green onions, white and green parts, minced
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • 1 clove garlic, minced
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 3/4 pound of zucchini, grated (about 2 cups)
  • 2 tablespoons extra virgin olive oil
  • Garlic Mayo
  • 1/2 cup mayonnaise
  • 1 clove garlic, finely minced
  • Rest of burger
  • Several leaves of lettuce
  • Thinly sliced red onion
  • Thinly sliced tomato
  • Burger buns
  • Butter
Instructions:
  • Prepare the burger mix: Combine ground turkey, green onions, basil, oregano, garlic, black pepper, and salt in a large bowl. Mix thoroughly by hand. Gradually add grated zucchini, ensuring even distribution in the mixture.
  • Form turkey zucchini mixture into six patties. Cook patties in a skillet over medium heat for 4 to 5 minutes on each side. Avoid high heat to prevent over-browning. Transfer to a plate to keep warm.
  • Toast the buns: After cooking the burgers, use the same pan to melt butter and toast the buns cut side down until edges are golden brown on medium-high heat.
  • Create a flavorful garlic mayo by combining finely minced garlic with mayonnaise in a small bowl.
  • To assemble the burger, layer the bottom bun with garlic mayo, lettuce, burger patty, onion, tomato, another lettuce leaf (optional), and top with the remaining bun. The lettuce at the bottom helps keep the bun from getting soggy.
