Greek-inspired Turkey and Zucchini Meatballs with Olives and Feta: Moist and flavorful!
Ingredients:
  • 1 pound ground turkey
  • 1 small zucchini, grated and squeezed dry
  • 1 large egg, beaten
  • 0.5 cup panko bread crumbs
  • 10 pitted kalamata olives, diced
  • 4 tablespoons crumbled feta cheese
  • 1 teaspoon Greek seasoning (such as Cavender's®)
  • 1 cup Greek yogurt
  • 0.25 cup jarred roasted red pepper strips
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a large bowl, mix together turkey, zucchini, egg, bread crumbs, olives, feta cheese, and Greek seasoning until well combined.
  • Use an ice cream scoop to create meatballs and transfer them onto a baking sheet.
  • Cook until perfectly tender and no longer pink at the center, approximately 25 minutes in the preheated oven.
  • Once the meatballs are in the oven, combine Greek yogurt, red pepper strips, lemon juice, olive oil, and garlic in a food processor. Blend until smooth, then season with salt and pepper. Serve as a dipping sauce for the meatballs.
