Turkey-Pasta Pie

Impress guests with an easy Italian pot pie!
Ingredients:
  • 1/2 pound ground turkey
  • 1 small onion, finely chopped (1/4 cup)
  • 1 can (8 ounces) stewed tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1/2 teaspoon Italian seasoning
  • 6 ounces uncooked fettuccine
  • 1 egg
  • 1 tablespoon butter or margarine, melted
  • 1 cup shredded mozzarella cheese (4 ounces)
  • 1 cup small curd creamed cottage cheese
  • 1 cup broccoli or frozen (thawed) chopped broccoli
  • 1/4 cup grated Parmesan cheese
Instructions:
  • In a 10-inch skillet, sauté the turkey and onion over medium heat until the turkey is cooked through; then drain the excess fat. Add tomatoes, tomato sauce, and Italian seasoning. Bring to a boil, then lower the heat, cover, and simmer for 10 minutes, stirring occasionally.
  • Cook the fettuccine according to package instructions, then drain. In a medium bowl, beat one egg with butter. Stir in cooked fettuccine and mozzarella cheese. Spread the mixture evenly in a 10x1 1/2 inch ungreased pie plate, pressing it onto the bottom and up the sides.
  • Combine cottage cheese and 1 egg until well mixed; spread this mixture over the fettuccine layer in a pie plate. Sprinkle broccoli evenly over the top. Spoon the turkey mixture on top of the broccoli layer. Finish by sprinkling Parmesan cheese over the entire dish.
  • Preheat the oven to 350°F. Bake the dish uncovered for around 30 minutes or until it is heated through in the center. Allow it to rest for 10 minutes before slicing.
