Make a luscious Turkish Delight ice-cream cake ahead of time for maximum flavor and creaminess.
Ingredients:
  • 2L Strawberries & Cream ice-cream, softened
  • 100g fresh or frozen raspberries, coarsely chopped
  • 8 Meringue Nests, coarsely broken
  • 4 x 55g Fry's Turkish Delight bars, chopped
  • 300ml thickened cream
  • 12.00 gm icing sugar mixture
  • Fresh strawberries, to serve
  • Fresh raspberries, to serve
Instructions:
  • Prepare the loaf pan by greasing and lining with plastic wrap, allowing the wrap to hang over the sides.
  • In a large bowl, mix together the ice cream, raspberries, most of the meringue, and most of the Turkish delight. Transfer the mixture into the lined pan, smoothing the surface. Freeze for 6-8 hours until firm.
  • Whip cream and icing sugar in a bowl using an electric mixer until soft peaks form.
  • Invert the ice-cream cake onto a platter. Spread on whipped cream, garnish with leftover meringue, Turkish delight, strawberries, and raspberries. Enjoy promptly.
