Famous Narnia-inspired orange dessert perfect for tea parties and special occasions. Surprise your loved ones with a sweet treat!
Ingredients:
  • 1.5 cups water
  • 3 cups granulated sugar
  • 3 tablespoons light corn syrup
  • 0.5 cup orange juice
  • 3 tablespoons orange zest
  • 3 (.25 ounce) envelopes unflavored gelatin
  • 0.75 cup cornstarch
  • 0.5 cup cold water
  • 1 tablespoon vanilla extract
  • 0.75 cup chopped pistachio nuts
  • confectioners' sugar for dusting
Instructions:
  • In a large saucepan over medium-high heat, combine 1 1/2 cups of water, sugar, and corn syrup. Bring to a boil and cook, stirring frequently, until it reaches 240 degrees F (115 degrees C) on a candy thermometer. Keep the mixture hot and set aside.
  • Combine orange juice, orange zest, and gelatin, then let it sit. In a small bowl, mix cornstarch with 1/2 cup cold water. Stir it into the hot syrup and cook over medium-low heat until thickened, stirring gently.
  • Take the syrup off the heat and mix in the orange juice, vanilla, and pistachios. Dust an 8x8-inch pan generously with confectioners' sugar. Transfer the Turkish delight to the pan and allow it to cool in a cool, dry place (not the fridge) until firm, about 3 to 4 hours.
  • Once the dish has cooled, generously dust the top with an additional layer of powdered sugar. Cut into 1-inch squares and coat each piece thoroughly with confectioners' sugar. Keep in an airtight container at room temperature.
