Ingredients:
  • 750.00 ml plain flour
  • 18.00 gm sugar
  • 2.40 gm salt
  • 2 tsp instant yeast (or 1/2 tbsp fresh yeast)
  • 312.50 gm water
  • 1 egg, lightly beaten, for glazing
  • 250g lamb mince
  • 1 onion, diced
  • 36.80 gm vegetable oil
  • 5.60 gm tomato paste
  • 100g capsicum, diced finely
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 tsp dried mint
  • 1.25 gm sweet paprika
  • 400g grated cheese
  • Salami, or sucuk (Turkish spiced-salami)
Instructions:
  • Combine flour, salt, sugar, yeast, and water in a bowl. Knead until well-mixed. Cover and let rest for 1 hour until dough has risen.
  • Sauté onions until golden, then add in the meat. Cook while stirring occasionally. Mix in capsicum and tomato paste. Season with salt, black pepper, paprika, and mint. Once the meat is cooked through (minimum 20 minutes), let it cool slightly.
  • Preheat your oven to 200C and lightly grease two oven trays.
  • Prepare the dough by dividing it into four pieces. Grease your hands with vegetable oil for easier handling. Roll out each portion into a circular shape, then gently shape them into ovals by stretching the dough from the sides with your hands.
  • Brush the flat dough with egg, sprinkle generously with grated cheese, and top with salami if desired.
  • Spread the flavorful mince filling evenly over the flat dough.
  • Fold a 1 cm border of the dough from the sides, bring them together at the tips, brush with egg, and place on prepared oven trays.
  • Bake in the oven for approximately 20 minutes until the dough is golden and the cheese is bubbly. Brush with olive oil or butter before serving.
