Savor the flavors of Turkey with a budget-friendly and crowd-pleasing pide, perfect for game day gatherings.
Ingredients:
  • 250g bread and pizza plain flour
  • 1 tsp instant dried yeast
  • 2.40 gm salt
  • 2.25 gm sugar
  • 150ml water
  • 13.80 gm olive oil, plus extra to grease
  • 1 red onion, finely chopped
  • 2 garlic cloves, chopped
  • 500g lamb mince
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 5.00 gm paprika
  • 1 large tomato, finely chopped
  • 22.20 gm tomato paste
  • Small handful fresh mint leaves, chopped, plus extra, to serve
  • Small handful fresh coriander leaves, chopped
  • 40.00 ml couscous
  • 125g Greek Style Yoghurt
  • 2 tsp harissa
Instructions:
  • In a large bowl, sift the flour and stir in the yeast. Add salt and sugar, mix well. Create a well in the center, pour in water and oil. Stir until just combined, then use your hands to form a dough. Transfer dough to a floured surface, knead for 5 minutes. Drizzle extra oil in a clean bowl, add dough, and coat it. Cover with a tea towel and let it rise in a warm place for an hour until doubled in size.
  • - Heat oil in a skillet over medium heat. Sauté onion for 5 minutes. Add garlic and lamb; cook for 5-8 minutes until lamb browns. Sprinkle in cumin, coriander, and paprika; sauté for 1 minute. Mix in tomato and paste. Season and simmer for 5 minutes. Let it cool slightly, then fold in mint and coriander.
  • Preheat your oven to a high heat of 250C/230C fan forced. Lightly coat 2 baking trays with a dusting of couscous for a crispy base.
  • Gently press the dough in the bowl to remove the air, then transfer it to a floured surface. Divide the dough in half and roll out each piece to a 30cm disc. Place them on the trays and let them sit for 20 minutes to rise slightly. Spread the lamb mixture on top of the dough, leaving a 2cm border. Fold in the sides to make an oval shape, twist the ends, and sprinkle with the extra couscous.
  • Bake for 10-12 minutes until crispy and golden. Combine yoghurt and harissa in a bowl, season, and stir until almost mixed. Drizzle mixture over pizzas and sprinkle with extra mint.
