Top Turkish bread with fresh vegetables and cheese for a delicious vegetarian pizza.
Ingredients:
  • 60ml olive oil
  • 300g baby spinach
  • Zest and juice of 1 large lemon (plus lemon wedges to serve)
  • 1 round Turkish bread or half a rectangle of Turkish bread, halved sideways through the centre
  • 250.00 ml grated mozzarella cheese
  • 250.00 ml crumbled feta cheese
Instructions:
  • Preheat the oven to 190°C for the perfect cooking temperature.
  • In a frypan, warm 1 tablespoon of oil. Add garlic, spinach, lemon rind, and half of the juice. Cook gently until the spinach wilts. Let it cool, then gently squeeze out extra liquid.
  • Spread the spinach mixture over one bread half, drizzle with remaining lemon juice, add cheeses, season with pepper, then cover with the other bread half. Drizzle with remaining oil, wrap in foil, place on a baking sheet, press with a heavy baking tray, and bake for 10 minutes. Serve with lemon wedges.
