Budget-friendly and family-friendy quick meal.
Ingredients:
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 20.00 ml ground coriander
  • 5.00 gm ground cumin
  • 350g lamb mince
  • 40.00 ml pine nuts
  • 1 loaf Turkish bread
  • 44.40 gm tomato paste
  • 150g feta cheese, crumbled
  • 1 large tomato, quartered, seeds removed, diced
  • 62.50 ml fresh flat-leaf parsley leaves, chopped
Instructions:
  • Preheat the oven to 200°C and prepare a baking tray by lining it with baking paper.
  • In a large, heavy-based frying pan over medium heat, heat oil. Add onion and garlic. Sauté for 3 minutes until soft. Stir in coriander, cumin, and mince. Increase heat to high. Cook for 5 minutes until browned. Add nuts, salt, and pepper. Stir and cook for an additional 2 minutes. Let cool.
  • On a baking tray, lay out the bread slices. Evenly spread tomato paste on each slice. Sprinkle half of the feta over the tomato paste. Spoon the mince over the feta. Sprinkle the remaining feta on top. Bake for 15 minutes until heated through. Finish with fresh tomato and parsley on top before serving.
