Brightly colored turmeric rice with peas and carrots is a quick and easy weeknight side dish.
Ingredients:
  • 1 small onion, chopped
  • 1 cup water
  • 1 tablespoon ground turmeric
  • 1 cube chicken bouillon
  • 0.75 cup frozen mixed peas and carrots
  • 1 cup white rice, rinsed
Instructions:
  • In a saucepan over medium heat, melt butter until sizzling. Sauté onion until golden for about 5 minutes. Stir in water, turmeric, and bouillon cube until well mixed. Add peas and carrots, then incorporate rice. Bring to a boil, cover, and simmer until rice is tender and liquid is absorbed, around 15 minutes.
