Ingredients:
  • 1 (10 ounce) package turmeric rotini
  • 3 tablespoons extra-virgin olive oil, divided
  • 0.5 cup chopped green bell pepper
  • 0.5 cup sliced carrot
  • 0.25 cup chopped red onion
  • 1 cup fresh broccoli florets
  • 1 cup fresh cauliflower florets
  • 1 pinch seasoned salt, or to taste
  • 0.66666668653488 cup mayonnaise
  • 3 tablespoons balsamic vinegar
  • 1 sprig fresh basil
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook rotini until al dente, approximately 8 minutes. Drain and transfer to a large bowl. Toss with 2 tablespoons of olive oil and set aside.
  • In a hot nonstick skillet, shimmer olive oil over medium heat. Add bell pepper, carrot, onion, broccoli, cauliflower, and seasoned salt. Cook and stir until broccoli is vibrant green and onion starts to turn translucent, around 3 minutes.
  • Combine the veggies with the pasta, then chill the salad for 30 minutes to enhance flavors and chill.
  • Take the chilled salad out of the fridge and mix it gently with mayonnaise and balsamic vinegar. Add more seasoned salt to taste, if desired. Top it off with fresh basil for a delightful finish.
