Tuscan fish tray bake

Easy and delicious fish tray bake for a quick weeknight meal.
Ingredients:
  • 1 red onion, halved, thinly sliced
  • 1 red capsicum, cut into 1cm thick strips
  • 36.40 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • 20.00 ml balsamic vinegar
  • 700g bottle passata cooking sauce
  • 125.00 ml Sicilian olives
  • 62.50 ml chopped fresh basil leaves
  • 4 x 150g firm white fish fillets, skin on
  • Extra small fresh basil leaves, to serve
  • Crusty bread, to serve
Instructions:
  • - Preheat your oven to 200C/180C fan-forced. - Evenly spread onions and capsicums on a large baking tray. - Drizzle with oil and bake for 20 minutes. - Stir in garlic, vinegar, and passata. - Bake for an additional 10 minutes until hot and bubbling around the edges.
  • Combine olives and fresh basil, then season with salt and pepper. Place the fish fillets skin-side down in a baking tray. Bake for 15 more minutes until the fish is cooked. Garnish with additional basil leaves and serve with crusty bread.
