Indulge in a creamy, cheesy twice-baked potato casserole made with everyday ingredients for a comforting weeknight meal.
Ingredients:
  • 4 large baking potatoes
  • 1 cup shredded Cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup butter, divided
  • 0.25 cup milk
  • 0.25 cup cream cheese, softened
  • 0.25 cup chopped fresh chives, or to taste
  • 0.5 teaspoon garlic salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and prick the potatoes all over with a fork before laying them out on a baking sheet.
  • Roast in the oven until potatoes are fork-tender, about 50-60 minutes.
  • Preheat oven to 350°F (175°C) and generously butter a casserole dish.
  • Transfer the potato flesh to a bowl and discard the skins. Mix in Cheddar cheese, sour cream, 1/4 cup butter, milk, cream cheese, chives, salt, garlic salt, and pepper. Mash until combined but slightly lumpy. Spread into a casserole dish and create peaks on the surface using a fork.
  • Bake in the preheated oven for 30 minutes until peaks are slightly crisped. Pour the remaining 1/4 cup of butter on top and continue baking for an additional 15 minutes until golden brown.
