Irresistible cheesy potato casserole: a delicious twist on a classic dish, perfect for any meal. Make ahead for convenience. Your new go-to favorite!
Ingredients:
  • 3 pounds russet potatoes
  • 12 ounces sliced bacon (about 12 slices)
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 1/2 cup whole milk
  • 2 tablespoons salted butter, melted, plus more for greasing
  • 2 1/2 cups grated Cheddar cheese, divided
  • 1 1/2 cups sliced scallions (white and green parts), divided
  • 1 teaspoon garlic powder
  • 2 teaspoons salt, plus more to taste
  • A few cracks freshly ground black pepper
Instructions:
  • Preheat your oven to a toasty 400°F.
  • Prepare the potatoes for baking by poking them with a fork and wrapping them in foil. Bake until tender, typically 40 to 60 minutes. Unwrap and allow to cool before handling.
  • Place the bacon strips in a single layer on a foil-lined baking sheet with a rack on top to ensure crispy perfection.
  • Bake the bacon until slightly shriveled and darkened, about 15 to 20 minutes. Transfer to a paper towel-lined plate to cool. Chop into small bits and set aside.
  • Peel and mash the potatoes: Once they are cool enough to handle, slice the potatoes in half and peel the skin off with a soup spoon. Cut the potato flesh into chunks and place in a large mixing bowl.
  • Combine richness and flavor: Mix sour cream, cream cheese, milk, and melted butter with the potatoes. Mash until blended with some lumps remaining. Fold in half the bacon, 1 1/2 cups cheddar, 1 cup scallions, garlic powder, salt, and pepper using a spatula. Adjust seasoning to taste.
  • Lower the oven temperature to 350°F and generously butter a 9 x 13-inch baking dish.
  • Spread the potato mixture evenly in the dish and top with the rest of the cheddar cheese. Bake covered with foil for 40 minutes, then remove foil and bake for additional 20 minutes until cheese is golden brown and slightly bubbly on the edges.
