Decadent baked potato casserole loaded with crispy bacon, cheddar cheese, and fresh chives. A guaranteed crowd-pleaser!
Ingredients:
  • nonstick cooking spray
  • 10 russet potatoes, peeled and cubed
  • 1/2 cup whole milk
  • 1 teaspoon butter, softened
  • salt to taste
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups shredded Cheddar cheese, divided
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese
  • 8 strips bacon, crisp cooked and crumbled
  • 2 tablespoons chopped chives
Instructions:
  • Prepare your ingredients. Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking dish with nonstick cooking spray.
  • In a large pot, cook the potatoes in salted water until tender. Drain and return to the pot.
  • Combine milk, butter, salt, pepper, and garlic powder with the potatoes, and mash until creamy.
  • Fold in the indulgent combination of 1 1/2 cups of sharp Cheddar cheese, creamy sour cream, rich cream cheese, most of the crispy bacon, and fragrant chives. Smooth the delectable potato mixture into the baking dish.
  • Bake in the preheated oven for 20 minutes until heated through. Sprinkle 1/2 cup Cheddar cheese on top and continue baking for an additional 5 to 10 minutes until the cheese is melted. Garnish with the remaining bacon and chives.
