Irresistible sweet potato casserole bites!
Ingredients:
  • 4 sweet potatoes
  • sea salt to taste
  • 0.25 cup unsalted butter
  • 1 (8 ounce) package cream cheese, softened
  • 1 pinch cayenne pepper, or more to taste
  • ground black pepper to taste
  • 1 cup mini marshmallows
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C and prepare a baking sheet by lining it with parchment paper.
  • Coat the sweet potatoes with a drizzle of olive oil and a sprinkle of sea salt, then place them on the baking sheet.
  • Bake in the preheated oven until a sharp knife easily pierces the potato, for about 50 to 60 minutes. Allow sweet potatoes to cool until easily handled, approximately 10 to 15 minutes.
  • In a saucepan, heat butter over medium heat until it turns a golden brown color and emits a nutty aroma, which should take about 5 to 8 minutes.
  • Halve the potatoes and remove the insides into a bowl. Mix in browned butter, cream cheese, 1/2 teaspoon salt, cayenne pepper, and black pepper. Mash until smooth. Refill the sweet potato skins and sprinkle each with 1/4 cup marshmallows. Return to baking sheet.
  • Bake in the oven for about 10 minutes until heated through and marshmallows are golden brown.
