Indulgent twice-baked sweet potatoes with crispy bacon, spicy jalapeños, and zesty lime for the perfect sweet and savory combo.
Ingredients:
  • 4 orange-fleshed sweet potatoes
  • 0.5 tablespoon olive oil
  • 1 (8 ounce) package bacon, diced
  • 0.33333334326744 cup sliced green onions
  • 0.25 cup diced jalapeno peppers
  • salt to taste
  • freshly ground black pepper to taste
  • cayenne pepper to taste
  • 0.5 cup shredded sharp white Cheddar cheese
  • 2 tablespoons creme fraiche
  • 2 teaspoons fresh lime juice
  • 2 tablespoons shredded sharp white Cheddar cheese, or to taste
Instructions:
  • Preheat your oven to 400°F (200°C) for the perfect cooking temperature.
  • Spread sweet potatoes out on a baking sheet, puncture with a knife, and generously coat with olive oil, ensuring even coverage.
  • Roast until fork-tender in the preheated oven for around 35 minutes.
  • In a pan over medium heat, cook the bacon until crispy and fat turns foamy, about 4 to 5 minutes. Stir in the green onions and jalapeno and cook for an additional minute. Remove from heat and set aside.
  • Allow the sweet potatoes to cool until they are safe to handle. Keep the oven on. Using a 45-degree angle, slice off the top 1/3 of each sweet potato. Gently scoop out the sweet potato flesh from both halves, ensuring to leave at least 1/4 inch of flesh in the bottoms to create the shells.
  • Season the sweet potato with salt, pepper, and cayenne. Mix in 1/2 cup cheese, creme fraiche, and lime juice. Mash it up with a potato masher. Stir in the bacon mixture until well combined. Fill the sweet potato shells with the mixture. Sprinkle remaining cheese on top.
  • Bake for 20-25 minutes until heated through and tops are golden brown.
