Twice-baked potatoes loaded with creamy cheese and green onion sauce - perfect for your next party!
Ingredients:
  • 4 large baking potatoes
  • 2 tablespoons butter
  • 2 tablespoons thinly sliced green onions
  • 2 tablespoons all-purpose flour
  • 0.5 cup half-and-half
  • 0.25 cup half-and-half
  • 1 tablespoon butter
  • 0.75 cup grated Parmesan cheese, divided
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lay out the potatoes on a baking sheet.
  • Roast the potatoes in the oven until they are tender, approximately 1 hour.
  • In a small pot over medium heat, melt 2 tablespoons of butter. Sauté green onions until soft for about 4 minutes. Stir in flour until well combined for about 1 minute. Gradually pour in milk and 1/2 cup half-and-half, stirring sauce constantly. Season with salt and cook until sauce thickens, about 10 to 15 minutes.
  • Slice off the tops of the baked potatoes and scoop out the insides into a bowl. Mash the pulp until smooth, then mix in 1/4 cup half-and-half and 1 tablespoon butter using an electric mixer. Add 1/2 cup Parmesan cheese and pepper, stirring until well combined.
  • Spoon the mashed potato mixture into the hollowed-out potato skins, creating a well on top of each potato. Top each well with the onion sauce and sprinkle with 1/4 cup of Parmesan cheese.
  • Preheat the broiler. Place the stuffed potatoes back in the oven and broil until beautifully golden for approximately 15 minutes.
