Indulge in a creamy two-cheese potato gratin with a perfect balance of Cheddar, Gruyère, and a hint of Dijon mustard for extra flavor.
Ingredients:
  • 1/2 cup butter or margarine
  • 1/2 cup Gold Medal™ all-purpose flour
  • 3 cups milk
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 10 cups thinly sliced (about 1/8 inch) Yukon gold potatoes (about 3 lb)
  • 1 1/2 cups shredded Gruyère cheese (6 oz)
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
Instructions:
  • Preheat the oven to 350°F and generously grease a 13x9-inch glass baking dish with shortening or cooking spray.
  • In a 2-quart saucepan, melt butter over medium heat. Whisk in flour until smooth. Slowly pour in milk and bring to a boil. Simmer on low for about 5 minutes, stirring often, until the sauce slightly thickens. Add mustard and salt, then mix well.
  • Layer half of the potatoes at the bottom of the baking dish, followed by half of the sauce and half of each cheese. Repeat the layers once more.
  • Bake for 50-55 minutes until potatoes are tender and the top is golden brown. Allow to rest for 5-10 minutes before serving.
