Two-potato wedges

Create a flavorful dish with dual potato wedges and zesty guacamole.
Ingredients:
  • 2 x 200g red skinned potatoes
  • 1 x 300g small sweet potato, peeled
  • 2 ripe avocados
  • 21.00 gm lemon juice
  • 2 spring onions, thinly sliced
  • 20.00 ml chopped coriander
Instructions:
  • Preheat the oven to 200C or 180C fan-forced and prepare a large oven tray with non-stick baking paper. Cut potatoes and sweet potatoes into wedges as instructed.
  • Place the potatoes and sweet potatoes on the baking tray. Drizzle with oil and bake until they are tender and beautifully golden brown, for about 40-45 minutes.
  • Slice avocados in half, remove pits, and scoop out flesh. Mash avocado and mix with lemon juice, onion, and coriander. Serve the guacamole with warm wedges for dipping.
