Two-tone chocolate mousse

Indulge in this decadent chocolate mousse to sweeten your midweek slump.
Ingredients:
  • 200g good-quality dark chocolate, chopped
  • 400ml thickened cream, chilled
  • 200g Toblerone chocolate bar, broken into pieces
  • 6 eggs, at room temperature, separated
  • pinch cream of tartar
  • 70.95 gm caster sugar
  • cocoa powder, to serve
Instructions:
  • In a small microwave-safe bowl, combine dark chocolate and 50ml cream. Microwave on MEDIUM-HIGH for 1 to 2 minutes, stirring every minute with a metal spoon until almost melted. Stir until smooth and let it cool for 10 minutes. Repeat the process with Toblerone and 50ml cream.
  • Whisk 3 egg yolks using a fork until blended. Gently fold into the melted dark chocolate mixture, stirring until fully incorporated. Repeat with the remaining egg yolks and Toblerone mixture.
  • With an electric mixer, whip egg whites and cream of tartar until soft peaks form. Gradually add sugar, one tablespoon at a time, and continue beating until the mixture becomes thick and glossy. Stir in 1 tablespoon of egg white into the dark chocolate mixture and mix thoroughly. Repeat with another tablespoon of egg white into the Toblerone mixture. Then divide the remaining egg whites evenly between both chocolate mixtures and gently fold in until just combined.
  • With an electric mixer, whip the remaining 300ml of cream until soft peaks form. Gently fold half of the whipped cream into the dark chocolate mixture and the other half into the Toblerone mixture.
  • Spoon dark chocolate mixture evenly into eight 2/3-cup serving glasses. Chill for 30 minutes. Add Toblerone mixture on top. Refrigerate for at least 6 hours until set. Sprinkle with cocoa powder before serving. Enjoy!
