Ukrainian Baba's Pork Roast

Delicious Ukrainian beet roast with vibrant red color, serve with kasha or noodles.
Ingredients:
  • 4 pounds pork shoulder roast
  • 3 tablespoons all-purpose flour
  • 2 tablespoons oil
  • 2 onions, thinly sliced
  • 4 medium beets
  • 1 cup sour cream
  • 1 pound pitted prunes
  • 1 teaspoon paprika
Instructions:
  • Dry the meat thoroughly with a paper towel, then coat it evenly with 2 tablespoons of flour and salt. Heat oil in a large Dutch oven over medium-high heat and brown the meat on all sides. Add sliced onions, cover, and simmer over low heat for approximately one hour, adding water as needed. Flip the meat twice while cooking.
  • In a saucepan, cover beets with water and bring to a boil. Cook until tender, then drain but save the liquid. Chop beets into cubes and place them in a roasting pan. Add prunes and the reserved beet water, cover, and simmer for 5 minutes.
  • Transfer the roast to a serving platter. Combine 1 tablespoon of flour with sour cream. Pour the mixture into the roasting pan, stirring well to incorporate the drippings. Allow the sauce to simmer until thickened. Season with paprika, taste, and adjust seasoning as needed.
