Try a classic Ukrainian beet salad with carrots, peas, potatoes, dill pickles, onion, and parsley for a burst of fresh flavors.
Ingredients:
  • 1 pound beets
  • 1 pound carrots
  • 1 pound potatoes
  • 1 onion, minced
  • 1 (8 ounce) can peas, drained
  • 2 large dill pickles, diced
  • 2 tablespoons olive oil
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a large pot, submerge beets in water and bring to a boil. Lower the heat, cover, and simmer for 20 minutes. Add carrots and potatoes, then boil for an additional 10 minutes. Turn off the heat, keep the pot covered, and let sit for 8 hours to overnight.
  • Start by peeling and dicing beets, carrots, and potatoes into small, uniform pieces. Combine all the vegetables in a large bowl and mix in onion, peas, pickles, olive oil, salt, and pepper. Just before serving, sprinkle with fresh parsley for an added touch.
