Ultimate leftover turkey sandwich

Festive leftovers sandwich inspired by Italian flavors. Customize with your Christmas leftovers.
Ingredients:
  • 1 kg strong white bread flour
  • 2 teaspoons fine sea salt
  • 650 ml tepid water
  • 1 x 7 g sachet dried yeast
  • 1 teaspoon honey or caster sugar
  • olive oil
  • extra virgin olive oil
  • white wine vinegar
  • 1 teaspoon wholegrain mustard
  • 2 carrots
  • ½ a cucumber
  • ¼ of a cauliflower
  • 8 radishes
  • ½ a fresh red chilli
  • 1 x 100 g jar of green pitted olives
  • 1 x 465 g jar of roasted peppers
  • 400 g sliced leftover higher-welfare turkey stuffing and skin
  • 6 tablespoons leftover gravy
  • 6 tablespoons mayonnaise
  • 250 g sliced leftover higher-welfare ham
  • 1 x 60 g bag of rocket
  • 200 g Cheddar or Red Leicester cheese
Instructions:
  • On a work surface, create a well in the flour and sea salt. Add water, yeast, and honey. Gradually mix with a fork until a dough forms. Knead for 10 minutes until smooth. Place dough in a bowl, cover, let rise for 1 hour. Drizzle olive oil in a roasting tray. Press dough into tray, make dimples, drizzle with olive oil. Let rise for 30 minutes. Preheat oven to 200°C/395°F/gas 6. Bake bread for 25-30 minutes. Feed with olive oil, cool for 15 minutes. Cook turkey skin in oven. Shred the meat and fry until crisp. Make pickle and mix remaining gravy with mayo. Slice bread, spread gravy mayo, layer fillings, and serve.
