Elevate your Thanksgiving turkey with a flavorful brown sugar and spice brine for a juicy and impressive dish.
Ingredients:
  • 1 gallon water
  • 2 cups kosher salt
  • 1.5 cups dark brown sugar
  • 3 large bay leaves
  • 1 tablespoon whole black peppercorns
  • 2.5 teaspoons dried rosemary
  • 2.5 teaspoons dried thyme
  • 12 whole cloves
Instructions:
  • Collect all your delicious ingredients.
  • In a large stockpot, heat water until boiling.
  • Combine the salt and brown sugar, stirring until dissolved, then bring to a boil.
  • Stir in fragrant bay leaves, peppercorns, rosemary, thyme, and cloves. Simmer gently over medium-low heat for 15 to 20 minutes.
  • Allow the mixture to cool entirely before proceeding.
  • Add the thawed turkey to a large non-reactive container and gently pour in the cooled brine.
  • Cover the turkey with cool water until submerged. Chill in the refrigerator for 8 to 12 hours.
  • Take the turkey out of the brine and allow it to rest at room temperature for approximately 2 hours.
  • Cook your turkey using your preferred method.
