- 6 Yukon Gold potatoes, peeled and cut into 1-inch pieces
- 2 cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
- 0.5 cup light cream
- salt and ground black pepper to taste
- In a 3-quart saucepan, simmer potatoes in flavorful chicken broth over medium-high heat until tender, about 10 minutes. Drain potatoes thoroughly in a colander, saving the delicious broth for later.
- Return the potatoes to the pan and combine with the reserved broth, cream, and butter. Mash until creamy and season with salt and pepper to taste.
