Ultra-cheesy spinach dip without mayo or sour cream, loaded with a blend of four cheeses and melted to perfection for a delectable snack.
Ingredients:
  • 1 tablespoon olive oil, divided
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
  • 0.5 cup milk
  • 6 ounces cream cheese
  • 1 cup shredded mozzarella cheese, divided
  • 0.25 cup shredded Cheddar cheese
  • 2 dashes Worcestershire sauce
Instructions:
  • Heat up the oven to 425 degrees F (220 degrees C) and slick a 1 1/2-quart shallow baking dish with 1 teaspoon of flavorful olive oil.
  • In a large pot over medium heat, heat 2 teaspoons of olive oil. Cook onion and garlic, stirring occasionally, until lightly browned, for about 4 to 7 minutes.
  • Simmer spinach until heated through, approximately 5 minutes. Drain any excess liquid and place in a bowl.
  • In a pot over medium heat, warm the milk. Add cream cheese and stir until melted, about 3 minutes. Add spinach mixture, 1/2 cup mozzarella, Cheddar cheese, Worcestershire sauce, salt, and pepper. Stir well to combine.
  • Transfer the mixture into the baking dish and sprinkle with the remaining 1/2 cup of mozzarella cheese.
  • Bake in the oven until bubbly and golden brown, about 20-25 minutes.
