Unique fried rice recipe

Kid-friendly fried rice that will have them begging for more!
Ingredients:
  • 200g brown rice
  • 200g white rice
  • 300g Australian Chicken Breast Fillet, cut into 3cm pieces
  • 2 carrots, peeled, finely chopped
  • 120g pea
  • 1 red capsicum, seeded, finely chopped
  • 21.00 gm soy sauce
  • 2 spring onions, thinly sliced
Instructions:
  • Cook brown and white rice separately according to package instructions, then drain thoroughly.
  • In a large frying pan over medium heat, sizzle the oil before tossing in the chicken. Stir-fry for 3-4 minutes until the chicken is perfectly browned and cooked through.
  • In a sizzling pan, toss in the carrot, peas, and capsicum. Stir-fry until veggies are tender, about 3 mins. Mix in the rice, stir-frying for another 2 mins until everything blends perfectly. Off the heat, fold in the soy sauce and spring onion. Enjoy!
