Indulgent triple-layered mint chocolate brownies.
Ingredients:
  • 4 (1 ounce) squares unsweetened chocolate, chopped
  • 1 cup butter
  • 1 cup all-purpose flour
  • 3 cups confectioners' sugar
  • 0.375 cup butter
  • 3 tablespoons milk
  • 2 teaspoons peppermint extract
  • 3 drops green food coloring
  • 3 (1 ounce) squares unsweetened chocolate, chopped
  • 3 tablespoons butter
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 10x15 inch jellyroll pan by greasing and flouring it. Melt 4 squares of chocolate with 1 cup of butter in a small saucepan over medium heat.
  • Combine eggs and sugar with the melted chocolate in a medium bowl until smooth. Mix in the flour and spread the batter evenly in the prepared pan.
  • **Original:** Bake for 17 to 20 minutes in the preheated oven. Cool in pan. To make the mint layer: Beat the confectioners' sugar with 3/8 cup of butter in a medium bowl. Gradually beat in milk, green food coloring and peppermint extract. Spread evenly over the brownie layer and refrigerate for at least 1 hour. **Revised:** Bake for 17 to 20 minutes, then cool in the pan.
