Upside down caramel banana tarts

Ingredients:
  • 1 sheet (25cm x 25cm) frozen puff pastry, thawed
  • 60g butter
  • 55g brown sugar
  • 21.00 gm fresh lemon juice
  • 4 bananas, peeled, thickly sliced diagonally
  • Vanilla ice cream, to serve
Instructions:
  • Preheat the oven to 200°C. Cut out circles of non-stick baking paper to fit the base of 4 pie dishes measuring 9.5cm in diameter. Use one dish as a template to create 4 pastry circles.
  • Melt butter in a frying pan over medium heat.
  • Combine the sugar and lemon juice, then toss in the bananas until coated. Serve equally among the dishes.
  • Lay the pastry circle over the bananas, gently folding the edges. Put the pie dishes on a baking tray and bake for 15 minutes until golden brown. Let them sit for a couple of minutes before carefully flipping onto serving plates. Remove the paper and serve with vanilla ice cream.
