Caramel-glazed apples shine in these irresistible upside-down muffins. Serve warm for a delightful treat.
Ingredients:
  • 3 baking apples, peeled and sliced
  • 0.5 cup packed brown sugar
  • 0.5 cup butter
  • 1 pinch salt
  • 0.5 cup chopped walnuts
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.75 teaspoon apple pie spice
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 0.75 cup butter, melted
  • 0.75 cup applesauce
  • 3 tablespoons buttermilk
  • 1 egg, lightly beaten
  • 0.75 teaspoon vanilla extract
Instructions:
  • Combine apples, brown sugar, butter, and salt in a large skillet over medium-high heat. Cook for about 30 minutes until soft and syrupy, stirring occasionally. Add walnuts and mix well.
  • Preheat the oven to 375°F (190°C) and lightly grease a muffin tin. Distribute the apple mixture evenly among the muffin cups.
  • In a big bowl, whisk together flour, brown sugar, baking powder, apple pie spice, baking soda, and salt. Create a small well in the center and leave it aside.
  • Mix together butter, applesauce, buttermilk, egg, and vanilla extract until combined. Add the mixture into the well in the flour mixture. Stir until just combined; the batter should be lumpy. Pour the batter over the apple mixture in the muffin cups.
  • Bake in the preheated oven for 15 to 20 minutes until a toothpick inserted into the center comes out clean. Let cool on a wire rack for 5 minutes, then gently loosen the edges of each muffin with a knife. Invert the pan onto a serving platter and serve while still hot.
